Pineapple Coffee Cake

Ingredients:
2 cups biscuit mix1/4 cup brown sugar 1 egg 1/4 tsp. cinnamon
1/4 cup sugar crushed pineapple 2/3 cup pineapple juice*

*The juice from one 12 oz. can of crushed pineapple drained, reserve the pineapple for topping.

Mix ingredients together well and pour into a greased 8" square pan. Cover top evenly with crushed pineapple and sprinkle with brown sugar and cinnamon. Bake at 375° F for 25 minutes.

This coffee cake is quick and easy, and the kids can help by putting on the topping, although it's really easy enough for a 12 year old to make.
